Potato Latkes (1977)

  • 3 large potatoes
  • 1 small onion
  • 3 eggs
  • 1 teaspoon salt
  • 2 tablespoons flour
  • Vegetable oil for frying


Wash, pare and grate potatoes. Strain. Grate and add onion. Beat eggs well; add to potatoes. Add salt and flour, mix well. Fry in frying pan, dropping carefully by spoonful into hot fat that is deep enough to almost cover latkes. Flip when golden brown, repeating on the other side. Drain on absorbent paper.
